And I'm probably sure there a real simple reason why but:
Lenses are stated as for - 35mm, Digital or 35mm and digital. Now on the digital side some state only suitable for aps-c size sensors so I've always assumed these can't be used on my full frame 5D, but why (is it something to do with the shape of the lens at the back?) and what would be the result of using one if it will fit?

Yeah dont put one of the EF-S lenses in your 5D it will damage the Mirror and the mechanism.
Reason being a cropped sensor multiplies the lens by a factor of 1.6 or 1.3 depending on the sensor so a 35mm lens becomes a 56mm if the sensor is 1.6. So to achieve a smaller size lens it has to set further back into the camera you can see what i mean if you compare the EF-S with a EF just look at the mount.
